Description
Varieties
Tempranillo (100%)
Terroir
The Tempranillo is from 20 year old vines at Mas de Cabrera. The calcareous soil is very poor in organic matter and the heat of 2021 resulted in an early ripening with sugar ahead of phenolic ripeness, opening up the possibility for a rosat style wine.
Production
The grapes were hand picked on the 13th September. They were destalked and pressed immediately and put in to stainless tank to start a natural fermentation. Once the fermentation completed, a small amount of sulphur was added to preserve the wine and it was transferred to old 225L barrels for 8 months. It was bottled unfiltered and unfined in August 2023. Only 558 bottles made!

Tasting Notes
This deeply coloured rosat wine is similar in style to a clarete but made solely from 100% Tempranillo. Showing ripe red fruits, the wine is held together with a little bit of tannin and the structure from the oak aging. Fresh acidity helps to deliver the balance and length typical of this style.
Food Pairing
The touch of tannin means that this wine can live alongside most foods for which a light red or oak-aged white may otherwise be chosen, delivering a unique twist to dishes from mushroom risotto to chicken parmigiana.
Serving Suggestions
Ideally served lightly chilled at 12-14°C.
